Dan in the Kitchen — Grilled Cream Cheese and Colby Jack Sandwich

Dan in the Kitchen — Grilled Cream Cheese and Colby Jack Sandwich

So, I’d like to introduce a new series of posts called “Dan in the Kitchen,” where I document Dan’s forays into the kitchen. I figure since I’m not always in the mood to cook, but we still need to eat, everyone would benefit from Dan gaining some cooking skills. Until we moved in together, pretty much all Dan ate was buffalo chicken subs from the student center deli, Cheez-its and pasta with bottled spaghetti sauce. To this day, if I’m not around for dinner, or if I don’t feel like cooking, he’ll just have a few beers and a pack of Oreos. So unappetizing, not to mention super unhealthy. I have high hopes that this “Dan in the Kitchen” thing is really going to...

Cheesy Creamy Shrimp Spaghetti

Cheesy Creamy Shrimp Spaghetti

So, it’s been a while since my last post, huh? Yeah. Things have been a little hectic around here. So, unsurprisingly, Dan and I have been doing a whole lot of Chinese delivery-ing, and very little cooking. I made fried chicken last weekend for my friend Alex’s birthday in NY, but…all the pictures are on his camera, and he has yet to send them to me. (Get on it, Hsu!) In other news, did you know that it’s Mob Week this week? I know everyone is super excited about the shark action going on at the Discovery Channel, but who wants to see sharks attacking a fish decoy when there are classic mobster movies on TV? And, guess what else premieres this week? The...

Cheddar-Stuffed Jalapeno Burger

Cheddar-Stuffed Jalapeno Burger

Dan was jonesing hard for Five Guy’s  and Ray’s Hell Burger this weekend. Who can blame him? They’ve got amazing burgers! But, getting to Five Guy’s meant spending 30 minutes in intense local traffic, and Ray’s Hell Burger is always packed to the gills on weekends, so neither option seemed particularly appealing.  We didn’t want to give up burgers altogether though, so we decided to buy ground beef and make/grill our own. What a great idea that was! The smell of grilled burgers is such a nice, summery smell, isn’t it? And, the homemade burgers were unbelievably yummy — juicy and bursting with flavor. So good, in fact, that we ended up making them for dinner two nights in a row. This picture doesn’t do a good...

Grilled Cheese with Kale and Caramelized Onions

Grilled Cheese with Kale and Caramelized Onions

Happy Emancipation Day, everyone! Hope you’re all enjoying your day off as much as I’m enjoying mine! Wait…Emancipation Day isn’t a federal holiday? Only DC government employees get the day off? And I’m the only one of my friends who gets to stay home today? Oh man. That sucks, guys. (I love you all, don’t kill me!) Anyway, being at home all day isn’t as great you’d think. Dan had to go to work, so it’s just me and the cats. The furry little bastards woke me up at 8:30am and wrecked my plans to sleep in, and now that I’m awake and bored, they have mysteriously disappeared. So now I’m tired, bored, and grouchy. Ugh. Well, if I can’t be well rested, I...

Almost No-Bake Cheesecake

Almost No-Bake Cheesecake

True or false: I have been dying to get my hands on some mini spring-form pans so that I can make adorable, baby-sized cheesecakes? True. So true! I’m a total sucker for miniaturized versions of regular things. In college, my dorm was filled with all kinds of crap that I bought for the sole reason that they were tiny and cute. Miniature condiment jars, tiny milk cartons full of candy, baby staplers…I’ve gotten better with age, but sometimes I still can’t help myself. Look at how cute my new pans are! And they’re so useful for portion-control. Now, instead of filling my fridge with a full-sized, fat-filled cheesecake, I can make tiny, guilt-free portions of the same delicious treat. Nevermind that Dan thinks it defeats...

Blueberry Cheesecake Bars

Blueberry Cheesecake Bars

Man, it’s been a long and stressful week. In the last 3 days I have done the following: attended the last few classes of my law school career, wrapped up all my cases for clinic, stayed awake for 38 hours straight to do work, and written an 8000 word paper in one day. I am tired. My body really isn’t as resilient as it used to be. But this week hasn’t been all bad. I got a job, for one thing. Far more universally exciting though — my friend Emily finally opened her Etsy shop! The picture above is an example of one of the adorable, hand-sewn Iphone/Ipod cases currently on sale on her website. As her artistic director and designer, I can tell...

The "Ultimate" Lasagna

The "Ultimate" Lasagna

I cook so much more when Dan comes to visit me. (He’s getting his masters in Boston while I finish up law school in DC). Most of the time I eat sandwiches or salads for lunch, and when dinner rolls around I just throw some taquitos in the microwave and call it a day. It’s just too much effort to cook for one person, you know? But I still like to read food blogs everyday and bookmark interesting recipes for later. This means that by the time Dan comes down, I’m bursting with energy to try all the recipes I’ve stockpiled in the intervening month. The most recent visit’s project = lasagna. (Oh hello!) This is a Tyler Florence recipe, and boy does it...

Grilled Sirloin, Roasted Potatoes and Tomato Mozzarella Salad

Grilled Sirloin, Roasted Potatoes and Tomato Mozzarella Salad

I have the best roommate in the world — she’s fun, she loves reality TV, she washes the dishes, and she has no problem being my culinary guinea pig. She also happened to give me a $100 gift certificate to Williams-Sonoma for Christmas, which I immediately used to buy an indoor electric grill. This little grill has opened up a whole new world of home cooking options for me. Good bye ugly, dry pan-seared meats.  Helloooo grilled pork chops, hamburgers, and juicy charred steaks! Dan and I had big plans to make pasta from scratch, but then 5 o’clock rolled around and we were both feeling super lazy and under-motivated. So what could we make for dinner that’s fast and delicious? Steak! Potatoes! Salad!...
