Man, it’s been a while since my last post! It’s not that I haven’t been cooking — I have, I swear. Pork chops, stuffed chicken breasts, soy-glazed salmon, etc. I just haven’t been able to find time to take pictures/blog about it. Yesterday was the second gathering of the Summer Supper Club, and it was Mexican night. After a long and painful week of bar studying, we needed the comfort of oozing cheese and guac and sour cream to help us unwind. So we blended up some mango margaritas, parked ourselves on my couch, and feasted on spinach & cheese quesadillas, enchiladas, 3-bean dip, homemade salsa, and apple-pie enchiladas (for dessert). The thing about quesadillas is that they’re delicious and easy to make. Dinner was set for 7:30, and I didn’t start cooking until nearly 7, but by the time everyone had arrived, I already had a huge pile of fresh quesadillas waiting on the table. In an effort to make post-graduation-bar-exam-studying less painful, my friends and I have decided to start a dinner club and take turns hosting potluck dinners once a week. We call it the “Summer Supper Club,” and each dinner will have a different theme. Today’s inaugural dinner theme: Southern Comfort. So we feasted on pulled pork (which will be featured in a guest blog post soon), shrimp & grits, fried pickles (which I will blog about tomorrow), green bean casserole, biscuits, salad, and pecan pie. Maybe it’s because it was the first thing I ever learned to cook, but fried rice is my ultimate comfort food. It’s what my mom made for me instead of chicken noodle soup when I was sick, and it was my go-to dinner in college when the dining hall’s food wasn’t cutting it. Some people crave hot and melty Kraft mac n’ cheese on a rainy day, I go for a big, steaming bowl of fried rice. Why is the weather in New England so crappy? I’ve been in Massachusetts for almost two days already, and I have yet to experience anything but ominous-looking clouds, wind, and rain. The only upside to this crappy weather is that it gives me an excuse to cook creamy, rich, hot comfort food that would be way too heavy on a warm day. When my friend Jill graduated (early!) law school back in December, she treated herself to a trip to Thailand. In between relaxing and sightseeing, she squeezed in a few cooking lessons, and brought back tons of awesome new recipes to share. At our most recent girls’ night dinner, she showed me, Emily, and Leslie how to make pad thai. I was pretty excited for this dinner, not least because this was my first time hanging out with Jill in about 4 months. I cook so much more when Dan comes to visit me. (He’s getting his masters in Boston while I finish up law school in DC). Most of the time I eat sandwiches or salads for lunch, and when dinner rolls around I just throw some taquitos in the microwave and call it a day. I have the best roommate in the world — she’s fun, she loves reality TV, she washes the dishes, and she has no problem being my culinary guinea pig. She also happened to give me a $100 gift certificate to Williams-Sonoma for Christmas, which I immediately used to buy an indoor electric grill.
