Apple Crunch Pie Apple Cups

Apple Crunch Pie Apple Cups

For me, the hardest part of dieting is cutting back on desserts. More lean protein, less carbs? Fine, hand me the chicken breast, and I’ll give you the bread basket. More fruits and veggies? Awesome! I love fruit, and can do some serious damage to a pile of greens. But when I see a plate of cookies or a pan of brownies? Disaster. My sweet tooth is a cruel mistress, and she’s hard to ignore. Really, the more I try to deprive myself of sugary goods, the more I think about them, and the more I end up eating. It’s a depressingly vicious cycle.  So, instead of completely cutting desserts out of my life (it doesn’t last long anyway), I’ve decided to try making...

Cinnamon Apple Crunch Pie

Cinnamon Apple Crunch Pie

Isn’t it amazing how you can always tell when fall has arrived? Even before the leaves start changing color, you can smell it in the air, and suddenly all you want is fuzzy sweaters and hot apple cider. I love VA in the fall. Summers here tend to be too hot/humid, and the winters have gotten a little too cold for my liking lately, but fall and spring are always wonderful. The air smells a little nicer, the colors of the local plant life become more vibrant, and the weather is almost always perfectly mild and comfortable. It’s definitely my favorite time of year. Temperatures around here have been slowly and steadily cooling off lately, but today was the first day that I really...

Good Old Fashioned Apple Pie

Good Old Fashioned Apple Pie

When you think about “America,” what comes to mind? Freedom? The Star Spangled Banner? Mel Gibson in the Patriot? I think of pie. Apple pie, to be exact.  Nothing is more American to me than apple pie. I mean, the saying “as American as apple pie” exists for a reason…    The last time I made apple pie was, coincidentally, on a 4th of July…5-ish years ago. I really want pie when I got up that morning, so I rolled out some dough and made a fresh pie brimming with tangy-sweet apples and topped with a pretty lattice crust. It didn’t occur to me that this was the perfect Independence Day dessert until we went over to a friend’s place for a BBQ, and...

Strawberries and Cream Pie

Strawberries and Cream Pie

Happy Chinese Lunar New Year, everyone! I wanted to make something special in honor of the holiday, but I haven’t had much time to cook lately. If I get a chance, I might put together a post featuring some of my favorite Asian recipes. But not today. Today I want to talk to you about pie. Specifically, a luscious, creamy pie loaded with strawberries, drizzled with chocolate, on a sweet graham cracker crust. A pie that’s so rich, so decadent, yet somehow so light that every bite just melts in your mouth.  Mmmmmm. Now, I know I tend to get really gushy and poetic every time I talk about desserts, but trust me when I say that this is a really good pie. If you...

Apple Pie Pancakes

Apple Pie Pancakes

Breakfast is a meal that rarely gets eaten in our house. Dan and I both wake up early for work, and neither of us has the energy, motivation or appetite to cook or eat anything in the morning. The only time we really have a chance to sit down and make/enjoy breakfast is during the weekend, but then all Dan wants to do is play video games, and I just want to do sleep until noon. So, it’s a pretty rare treat when one of us gets motivated enough to whip up anything more complicated than coffee in the morning. I was feeling uncommonly energized this morning, so I decided to cook something delicious for us to eat — Apple Pie Pancakes. Let me...

Blackberry Cobbler

Blackberry Cobbler

There has been an explosion of pumpkin themed posts on food blogs lately, and it’s making me crazy. Kind of like how it makes me crazy to see all the Christmas decorations at the mall when Halloween is barely over. I know, I know…pumpkins in October = completely different scenario. It’s fall. The leaves are turning, the trees are shedding, and pumpkins, apples, cranberries, etc., are seasonally appropriate. But you know, the more people try to convince me it’s time to give up summer and its bounty, the harder I want to cling to it. What can I say, I’m contrary like that. And what’s more summery than fat, juicy blackberries? Fat, juicy blackberries in a cobbler. True, the berries being hawked in most...

Caramel Apple Pie Cupcakes

Caramel Apple Pie Cupcakes

So, Sheryl over at Lady Behind the Curtain has started hosting a monthly Improv Cooking Challenge on her blog. The idea is that two ingredients will be assigned each month, and every participant is supposed to create something delicious with those ingredients. This is my first time being invited to do something like this, and I’m super excited — I think it’s going to be a lot of fun! I can’t wait to see what everyone comes up with. This month’s ingredients = caramel + apple. Caramel and apples are two ingredients that go together so well, and are paired in dishes all the time, but I was seriously stumped for a while about what to do. I thought about making caramel candied apples, but...

S’mores Pie

S’mores Pie

Call me crazy, but in my mind s’mores are a fall treat, not summer. I know, I know…summer camp and overnight camping trips –> camp fires –> s’mores and ghost stories. Camp fires remind me of autumn and cold weather, though. Maybe it’s because I went to math camp instead of summer camp. Or, maybe it’s because when I see a roaring fire burning real wood, I think of cool New England nights in Massachusetts with Dan’s family. Either way, the only time I crave s’mores is when there’s a chill in the air. And folks, it’s starting to get nippy hereabouts… If you’re an avid FoodGawker, you’ll know that this S’mores Pie is actually an imitation of the S’mores Bars posted by Endless...

Spinach and Mushroom Quiche

Spinach and Mushroom Quiche

My friend Mark came over for lunch yesterday. He’s a fantastic cook. During law school he was constantly whipping up delicious treats in his kitchen and bringing them to class. You’d think all that cooking would be a distraction during school, but he was also acing all his classes, teaching legal research and writing to bright young minds, and moonlighting as the Editor-in-Chief of the Law Review Journal. Don’t you hate people who are good at everything? Anyway, after drooling over his baked goods for the last three years, I’ve been dying to cook with Mark. So, when he came over, I roped him into helping me make a quiche. In no time at all, we were rolling out our store-bought pie crust, cooking/chopping...

Peanut Butter Cream Pie

Peanut Butter Cream Pie

Last Sunday, food blogger Jennifer Perillo’s husband suffered a massive and unexpected heart attack and passed away. He loved peanut butter cream pie, and as a tribute to him, Jennifer asked everyone to join her in celebrating his life and honoring his memory by making the dessert he loved so much. I have never met Jennifer Perillo, and until last week I had never read her blog. In fact, I probably would have never known of her existence if it weren’t for a delicious-looking peanut butter pie entry on FoodGawker early last week. In the last several days there has been an amazing influx of peanut butter cream pie entries on both TasteSpotting and FoodGawker, as hundreds of food bloggers rushed to support Jennifer. ...
