Happy Martin Luther King Day, everyone! And, happy Inauguration! Did you guys watch the festivities on TV this morning? I did, and let me tell you…the view from my couch this year was way better (and warmer) than it was in 2008 when my friends and I packed into the National Mall to see the action. And, watching the inauguration from home meant that I could enjoy a hot, delicious lunch when I got hungry, instead of gnawing on cold, unsatisfying granola bars and wishing the millions of people clogging the streets between Constitution Avenue and my warm apartment would magically disappear. Even though I regularly follow about a dozen food blogs, there are really only a handful of bloggers that I consistently turn to when I want ideas for certain things. Need a cupcake recipe? You know how some people really, really love McDonald’s? I’m not one of them. One of the greatest things about working downtown is that there are endless delicious lunch options within walking distance of my office.  When I feel like sushi, there’s a decent place tucked into the food court up the street. I don’t know what’s going on, but I’ve been having the most terrible allergies and allergy-induced asthma lately. I mean, I sneeze and wheeze all season every season, but things have been a lot worse this week. On Monday I was a zombie at work because the night before my allergies kept me awake (and struggling to take a full breath) until 1am. It sucked.  A lot. But you know what didn’t suck? When I posted my first Philly Cheese Steak recipe on reddit.com, I knew I’d get a hailstorm of protests from cheese steak purists and Philly natives. Where’s the cheese? The meat isn’t chopped right! Why did you put peppers in there?? You’re doing it all wrong!!! Calm down, guys. I know. It’s cool. I’ll make it up to you, I promise. See? Well guys, there is still a whole bunch of prime rib in my fridge. Like…a really scary amount. Two people cannot reasonably be expected to eat that much meat. But they can try! So, in a valiant effort to put a solid dent into our leftover roast, I chopped up a few slices and sauteed the pieces with onions and bell peppers to make Philly Cheese Steaks for dinner. Roasted Prime Rib Sandwich

Day 1 of Project “Eat All the Leftover Prime Rib Before $60 Worth of Meat Goes to Waste” = roasted prime rib sandwiches with dijon mustard and sweet onions for lunch. Mmm mmm mmmmm! The spicy dijon mustard paired perfectly with the rich, fatty beef, and the thin slices of sweet onion added a delightful flavor and texture contrast that rounded out the sandwiches nicely. Served with a cold beer or fizzy soda, this is about as good a lunch as you could hope for on a lazy Sunday morning! The last time I had homemade slow-cooker pulled pork was at the Summer Supper Club’s Southern Night 2 years go (holy crap, has it really been that long??). I made shrimp & grits, Karen brought over about a ton of tangy pork, and I think there were green beans, potatoes, and biscuits involved too. Yeah. It was an awesome dinner. Have you guys discovered the joys of oven-crisped bacon yet? If you haven’t you’re really missing out. It is so good! Better than griddle bacon, better than pan-fried bacon…this stuff is in a league of its own. For real. To be fair, bacon is pretty much always delicious; but, something magical happens when you cook it on a cooling rack in the oven. I think it’s because when the meat’s not laying in a pool of grease, it gets crispier. Combine that with the fact that the oven’s heat cooks each strip from all sides, and you get the crispest, most evenly looked bacon you’ve ever eaten.
