Sunday Brunch: Smoked Salmon, Goat Cheese & Scallion Scrambled Eggs On Toast

  • 4 large eggs
  • ¼ cup goat cheese crumbles
  • ½ cup scallions, chopped
  • ⅓ cup smoked salmon, chopped
  • 2 tbsp milk
  • Butter
  • Salt/pepper to taste
  • 4 slices ciabatta (or bread of choice), buttered and toasted
  • 1 tbsp cream cheese (optional)
  1. Crack your eggs into a large bowl, add your milk, and whisk until mixture is uniform. Season with salt/pepper to taste.
  2. Stir in goat cheese crumbles and chopped scallions.
  3. Grease the bottom of a pan or skillet generously with butter. (Or spray with cooking spray - up to you!)
  4. Heat pan/skillet over medium-low heat.
  5. Add egg mixture to the pan.
  6. Allow eggs to solidify and cook the outer layer until light yellow, then run your spatula through the entire mixture to gently toss and "scramble" your eggs.
  7. While your scrambled eggs still look slightly wet, stir in your chopped smoked salmon.
  8. Cook until desired scrambled egg consistency is reached, then remove pan from heat.
  9. To serve, place 2 slices of toasted ciabatta on each plate. Smear with a little cream cheese (if desired), then spoon some scrambled eggs on top, dividing the eggs evenly between bread/plates.
  10. Garnish with extra scallions and goat cheese crumbles (if desired).
  11. Dig in!
