  • 6 tbsp light brown sugar, packed
  • 1 cup flour
  • 7 oz sweetened condensed milk
  • ½ tsp vanilla extract
  • ¼ cup mini semisweet chocolate chips
Chocolate Buttercream Frosting
  • 12 tbsp butter, softened
  • ½ cup cocoa powder
  • 1 tsp salt
  • 2-1/2 cups powdered sugar
  • 2 tbsp milk
  • 2 tsp vanilla extract
  • ½ cup heavy cream
  • ⅓ cup Rich Chocolate Ovaltine powder
  • Mini chocolate chip cookies, for garnish (You can make your own, or save time and use Entenmann's minis)
To make your cupcakes:
  1. Preheat the oven to 350° F. Line two cupcake pans with paper liners (24 total).
  2. In a large bowl, cream together softened butter and brown sugar until light and fluffy, about 3 minutes.
  3. Mix in the eggs one at a time, beating well after each addition and scraping down the sides of the bowl as needed.
  4. Stir in the dry ingredients.
  5. Add the milk and vanilla, whisking until the batter is uniform
  6. Fold in the chocolate chips with a spatula.
  7. Divide the batter evenly between the prepared cupcake liners.
  8. Bake for 18-20 minutes, until a toothpick inserted in the center comes out clean.
  9. Allow cupcakes to cool in the pan 5-10 minutes, then transfer to a wire rack to cool completely.
  10. While your cupcakes are cooling, start making your cookie dough filling.
To make your cookie dough filling:
  1. In a medium bowl, cream together butter and sugar until light and fluffy.
  2. Mix in flour, condensed milk, and vanilla until smooth.
  3. Stir in the mini chocolate chips, cover dough with plastic wrap, and chill for at least 15 minutes.
To make your frosting
  1. Cream together the butter, cocoa, and salt in a large bowl until creamy and fluffy.
  2. Add powdered sugar, milk, and vanilla, and continue to whisk until smooth.
  3. Whisk in cream and Ovaltine.
  4. Beat mixture until light and fluffy. (Add more powdered sugar as necessary to achieve desired taste/consistency.)
To assemble your cupcakes:
  1. Using a cupcake corer or spoon, scoop out of the center of each cooled cupcake. Fill each hole with a chunk of the chilled cookie dough mixture.
  2. Pipe or spread frosting onto your cupcakes, covering the cookie dough filling. Garnish each cupcake with a single mini chocolate chip cookie.
  3. Enjoy at least one cupcake immediately, with a glass of milk. Then, hide the rest in a safe place so that no one else can get to them.
As per usual, because of my heavy-handed frosting habits, I ran out of frosting after about 12 cupcakes. The next time I make these, I will definitely double the frosting recipe.
