Snacktastic Sundays: Marinated Mozzarella Bites

  • 24 ounces fresh mozzarella, cut into bite size pieces
  • 2 tbsp finely chopped fresh parsley
  • 1-1/2 tbsp minced garlic
  • 2 tbsp red pepper flakes
  • 1 tsp salt (or more, to taste)
  • ½ tsp ground pepper
  • 1 cup olive oil
  1. Place mozzarella in medium sized bowl.
  2. In a separate, smaller bowl, combine olive oil, parsley, garlic, peppers, salt. Whisk to combine.
  3. Pour seasoned oil over mozzarella, and toss gently to coat.
  4. Spoon the cheese and marinade into a large mason jar.
  5. Allow cheese to marinate in the jar at room temperature for 30 minutes.
  6. Serve immediately or seal and place in the refrigerator for up to 2 weeks. (To serve post-refrigeration, let your jar of cheese sit at room temperature for 30-60 minutes.)
  7. Enjoy, with crackers!
