Snacktastic Sundays: Crock Pot Spinach & Artichoke Dip
  • 1 (9.2-oz) jar artichoke hearts, drained and chopped
  • 1 (16-oz) package frozen chopped spinach, thawed and squeezed dry
  • 8 oz sour cream
  • ½ largel onion, diced
  • 1 tbsp minced garlic
  • ¾ cup grated Parmesan cheese
  • ½ cup milk
  • ⅓ cup mayonnaise
  • 1 tbsp red wine vinegar
  • 8 ounces cream cheese, cut into cubes
  • Pinch of black pepper
  1. Place artichoke hearts, spinach, sour cream, onion, garlic, Parmesan, milk, mayo, vinegar and pepper into a slow cooker. Stir until well combined.
  2. Scatter cream cheese cubes on top of everything.
  3. Cover and cook on low heat for 2 hours.
  4. Uncover and stir your mixture until cream cheese is well incorporated.
  5. Cover and cook on high heat for an additional 15 minutes.
  6. Serve immediately with tortilla chips and/or toasted bread.
  7. Enjoy!
