Chocolate Chip Cookie Bars

It’s hard to believe, but the three dozen Chewy Chocolate Cherry Oatmeal Cookies I made on Friday are almost gone. I wish I were kidding, but…there are maybe 10 cookies left in the jar. Yeah. Dan and I are gross.

In a last ditch effort to exercise self restraint, I have packed away the remaining cookies and will be taking them to work tomorrow. (You’re welcome, Will.) If I can’t be skinny anymore, no one else can either!

Just kidding, calm down. No one is going to get fat from those cookies. They’re “healthy,” remember? Ha…ha…haha…ha.

Anyway, packing away the oatmeal cookies meant that Dan and I would be snack-less during the Oscars. That would be tragic! So, in a totally logical and reasonable move, I whipped us up another batch of cookies. With chocolate chips. In bar-form. Yeah, there’s going to be some serious cookie-belly pains happening tonight. Worth it. These cookie bars are too good to pass up!

Chocolate Chip Cookies Bars (Adapted from Butter Baking’s recipe)

Ingredients:
– 1 cup vegetable oil
– 1 cup brown sugar
– 1/2 cup white sugar
– 2 eggs
– 1 cup flour
– 1/2 tsp baking soda
– 1 tsp vanilla
– 1 tsp salt
– 1 cup chocolate chips

Steps:
(1) Preheat the oven to 350. Lightly grease a 9 x 13 baking pan.
(2) In a large bowl, combine vegetable oil and sugars. Mix until smooth.
(3) Add eggs, one at a time. Mix well.
(4) Slowly add dry ingredients until batter is smooth and thick.
(5) Stir in about 3/4 of the chocolate chips.
(6) Spoon batter into greased baking pan, then sprinkle the remaining chocolate chips on top.
(7) Bake 20-25 minutes, or until a toothpick or knife inserted into the center comes out clean.
(8) Allow to cool before cutting. Enjoy while watching the Oscars!

    These look FAB!!! I need to make them now. Just a quick question….I noticed that on the recipe you adapted it from you lowered the amount of flour from 21/2 cups down to just 1 c. That’s a lot of flour to change out of the recipe. How did this change the cookie bar?

      That’s a good question, because at the time I was making these I was sort of debating whether to follow the recipe 100% or go with my personal judgment. After adding 1 cup of flour my batter was already pretty thick — think of a consistency sort of between cake batter and regular cookie batter. I wanted my bars to be soft and chewy (almost brownie-like) so I decided to stop at 1 cup. I can’t comment on how this changed the cookie bar, since I’ve never seen the original form, but I can tell you that these turned out really well. Kind of like blondies, but with a chewier, more cookie-esque texture.

            I am trying this recipe now. I didn’t realize you had reduced the flour. I thought it was just something I did wrong (thin batter lol). I’m not the greatest cook. I can do it but I just lack the motivation. I LOVE blondies so I hope I have the same success.

    lol! my family is ‘gross’ too. we have the disappearing cookie problem frequently.
    when they’re in bar form, it makes it easier to snag more from the pan without feeling bad.
    what an awesome recipe!!

      Thanks! And, if you slice up the bars and put it in a tupperware so you can’t see how much of a whole pan you’ve already eaten…even less guilt 😉

    I just tried this today and it came out really runny even after 30 mins of baking. I did halve the recipe and used a smaller pan. I’m sure I measured correctly the ingredients. What do you think went wrong?

      I’m sorry these didn’t turn out well for you! Unfortunately, it’s hard for me to say what went wrong, since I wasn’t there. It could be that your oven runs less hot than mine, or maybe using a different proportion of ingredients had an impact. These bars ARE supposed to be a little gooey out of the oven, but maybe try baking it 10 min longer?
