Brown Butter Mashed Sweet Potatoes

Nothing will never take the place of mashed potatoes in my heart, but this browned butter sweet potato concoction is pretty high on my current list of favorite Thanksgiving side dishes. Just a little bit of brown butter and cinnamon to enhance the natural sweetness of the sweet potatoes, and a whole lot of nutty, fragrant browned butter to make it unbelievably toothsome and addictive.

So if you’re looking for something other than plain ol’ mashed potatoes this year (or maybe something in addition to regular potatoes…mmm, ‘taters), this is the recipe for you! And because it’s packed with vitamins and fiber and other good-for-you-things, you can eat that second helping without too much guilt….

Brown Butter Mashed Sweet Potatoes

Ingredients
  • 2 large sweet potatoes
  • 3 tbsp butter
  • 5-6 cups water
  • 1 tsp salt
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • ¼ to ⅓ cup skim milk
Directions
  1. Peel and slice sweet potatoes into halves.
  2. Place peeled halves into a pot with your water, and bring the water to a boil.
  3. Boil sweet potatoes for 40-60 minutes, or until a knife can easily pierce through the center of each potato.
  4. While potatoes are boiling, place your butter in a separate pan/pot on medium heat.
  5. Whisk and swirl your pan constantly until the butter begins to bubble.
  6. As soon as your butter is becomes deep amber color and brown bits start to appear in the bottom of the pan, remove it from the heat. (Your brown butter should smell kind of nutty/toffee-ish.)
  7. Pour the brown butter into a bowl and set aside to cool
  8. Getting back to your sweet potatoes, drain all but a few tablespoons of water from the pot.
  9. Using a masher (or a fork), mash the boiled sweet potatoes until you can't see anymore lumps (if you can't this to be extra smooth, you can use an immersion blender or food processor).
  10. Stir in milk, mixing until smooth (add more milk to the mixture depending on how you want the consistency of the potatoes to be).
  11. Add brown sugar, salt, and cinnamon. Mix until smooth.
  12. Serve warm.
  13. Enjoy!
