Easy Veggie Dip

Happy Tuesday, everyone! Did y’all have a good holiday weekend? Dan and I did!

To get our weekend started off with a bang, we let ourselves get talked into a midnight 5K in the city with our friends Liz and Scott (Liz…you definitely owe me a trip to the suburbs for this). This led to much sleepiness and napping during the day (thankfully we both had Friday off from work). Surprising to no one, we didn’t get anything productive accomplished.

The next day, we had our friends Brad/Amy over for a lunch – pizza, beer, and cherry pie, along with a mandatory July 4th “Independence Day” movie viewing. This was followed by a dinner party and fireworks viewing in the city with more friends.

Easy Veggie Dip

For this dinner party, I promised to contribute a dip and a dessert. The dessert was going to be sugar cookie cups with a creamy lemon curd filling and raspberries + blueberries for some red/white/blue flair. The dessert did not happen. See infra: midnight exercise and napping.

The dip, however, did happen. Mostly because it is literally the easiest recipe on the planet. Mix cream cheese, Greek yogurt, and a smidge of mayo in a bowl with a packet of Ranch Dressing powder, stir in a few cups of finely chopped veggies, and voila, instant delicious dip that you can eat with (or on) anything.

I actually got the idea for this dip from a killer puff pastry veggie pizza that my mom’s coworker used to make. I always thought that the creamy topping would taste great as a dip, and I was right! The best part is, it’s totally customizable – you can use whatever vegetables you like, and it’ll taste good no matter how you tweak the other ingredients to suit your own taste buds.

To serve, this dip is delicious with tortilla chips or pita wedges, but Dan and I have also been enjoying it the last few days with loads of fresh, raw veggies. It’s a seriously delicious, healthy snack that you guys will definitely want to try soon!

Easy Veggie Dip

Ingredients
  • 8 oz cream cheese, softened
  • ¼ cup mayonnaise
  • ½ cup Greek yogurt
  • 1 package Ranch dressing mix
  • 2-3 cups raw veggies, finely chopped (I like to use broccoli, cauliflower, cucumber, carrots, and red onion)
  • Tortilla chips (to serve)
  • Sliced raw veggies (to serve)
Directions
  1. In a medium bowl, combine your softened cream cheese, mayo, and Greek yogurt. Mix well.
  2. Stir in Ranch dressing mix.
  3. Add chopped veggies and stir to distribute evenly.
  4. Refrigerate dip until ready to serve.
  5. When ready, serve dip with tortilla chips and/or sliced raw veggies.
  6. Enjoy!
